Encebolladas

A very quick appetizer for all types of gatherings. Just make sure that you make plenty to go around.  This can also become a quick snack not just necesarily for your gatherings, all you have to do is combine it with another simple side and your are set. For these that i made, I added Pickled onions with Habanero and some avocado slices to mild down the heat from my salsa.

You will need:

  1. Corn tortillas
  2. Onion finely chopped
  3. Queso fresco (fresh cheese)
  4. Salsa (red and spicy preferred)

Heat the griddle and

heat the tortillas on one side, Flip and add the salsa.

Add the onion.

Add the queso fresco.

Add a bit more of the salsa and cover with the other tortilla. Flip if the bottom tortilla is toasted. you need them crunchy on both sides.

Once they are done you will remove from the heat and cut the tortilla in 4 slices and place on your plate. 

Thats it! DELICIOUS!
