I’ve spoken about Flautas before and how we can use almost anything to fill them with before we make them into those taquitos that we so love. Here I’ll show steps on how I get the chicken ready for the filling to the final step in plating and serving.
Boil some chicken with an onion, garlic and some cilantro. Once its ready set aside to cool down until we get ready for it.
You will need:
- Cooked Chicken (shredded)
- Tomatoes (sliced)
- Onion (sliced)
- Bell Peppers (sliced)
- Bay Leaves (about 2 or 3 depending on size)
- Chicken broth (from what we have set aside)
- Corn Tortillas
- Oil (for frying)
Lets shred the chicken that we set aside earlier. And leave the broth for a later use.
Once the chicken is shredded we will set aside and heat a pan with some oil. While the pan is heating we will have enough time to Slice up the tomatoes, onion and bell pepper. and get the bay leaves as well.
Time to add all these ingredients to the heated oil and start frying.
Once the ingredients start cooking they might become a bit dry so here you may add a bit of the broth you have on the side its ok if it is runny because you will add the chicken later and it will absorb the liquid. Add a bit of knorr instead of the salt to season. Remember a little goes a long way so before you add more make sure you taste it first. Once you have everything cooked fully you will add the chicken and mix well.
Here you will have the chance to taste it once more and if it’s too dry you may add a bit more of the broth and season with more knorr. Once you have this cooked to your liking we will set aside to warm down a bit while we heat up some of the tortillas.
We will heat enough tortillas to make all the chicken that we have. Once we are done with the tortillas will grab a bit of the chicken, place it on the tortilla and roll. once we have the taco we will hold it in place with a toothpick. We will do this to all the tortillas. Heat some more if you still have some chicken left. (you may use this chicken for some enchiladas too). By this time you will have a deep pan with oil for frying ready or maybe a deep fryer if you have one. Start frying the taquitos.
When you are done with the first batch make sure you put them standing on a deep dish with a paper napkin on the bottom so it can pick up the extra dripping oil. Here on this picture I used a strainer.
Once you finish frying all the taquitos. You may start setting up your dish.
I was able to multitask and get everything ready for my dish. I made some refried beans, rice, guacamole, salsa, shredded some lettuce and some tomatoes. I have the recipe for the rice already posted so I’ll put a link so you can go and check it out. I did add two different things to this rice. Tomato sauce and black beans.
This was made for a late lunch early dinner. We had some homemade Horchata as well. All the side dishes depend solemnly on what you like and what others ask of you. Just have fun and cook what you love.
