Pozole Verde (Chicken Pozole)

Pozole is a traditional Mexican Hominy-based Stew. This dish is cooked in various ways and in different colors (flavors). Mostly red and green but sometimes it can be white as well. The meat is your preference in this one Imade it with chicken. The toppings vary and are also to your liking. The Pozole Verde has a bit of different toppings than the Red Pozole but we will talk about that one in a later post. Lets get to the ingredients for this one.

You will need:

  1. Cooked Chicken breast (save the broth)
  2. Hominy
  3. Chiles serranos
  4. Cilantro
  5. Tomatillos
  6. Oregano
  7. Ground Cumin
  8. Salt

Toppings:

  1. Shredded lettuce
  2. Sliced radishes
  3. Chopped onions
  4. Avocado
  5. Limes
  6. Tortilla chips

Once you are done cooking the chicken you will set aside and let it cool down for easy shredding. Make sure you keep all the broth because we will still use it all.

 

Time to make the green sauce.  Add tomatillos, cilantro, chiles serranos, oregano, ground cumin, salt and chicken broth to a blender. Mix well. Add more broth if the mix is too thick to blend.

 

Once mixed its time to cook it. Add some oil to a pan and then add the sauce. You will know when it’s cooked when it changes from a bright green to a darker one. By this time you need to add the hominy to the broth and turn on the heat. Let it boil.

 

Once the hominy is boiling you will add the green sauce, bring to a boil and add the chicken. One more boil and it’s time to do a taste test. Season according to your liking.

 

This is it. Once the last seasoning has happened you are ready to eat. Just add your favorite toppings. Here I added lettuce, radishes, avocado, onion and tortilla chips and a squeeze of lime juice.
