Tortitas de papa are a fried potato and egg pattie. They can be eaten alone or accompanied by some salsa and rice or even eaten in a taco just like I did for this recipe. But I’ll tell you one thing, once you try them you will love them.
You will need:
- Boiled potatoes
- Nopales (cooked in small cubes)
- Cotija Cheese
- Salt and Pepper
- Onion (chopped)
Cut the Nopapes in small cubes and boil with some onion, cilantro, garlic and salt. Bring to a boil and remove once they become tender. Drain and set aside for later.
Once the potatoes are cooked, place them in a bowl and add the Onion, cheese, eggs and some salt and pepper. Mash-up really well, add the nopales and mix. Now its time to heat some oil to fry these patties.
Grab a spoonful of mix and fry. Turn only once when you see that the bottom is nice and brown. Once fried, remove and place on a paper towel to absorb the excess oil. Repeat this until all the potato mix is gone.
Once done, its your choice on you want to eat them. Alone, with some rice, or even as a taco.
