A classic mexican breakfast. Very easy to make and delicious to eat. This basic dish is composed of an egg and tomato salsa over a lightly fried tortilla (for my personal preference I like my tortilla a bit more fried, just like a tostada). Served side by side with rice and beans.
You will need:
- Corn Tortilla
- Tomatoes (sliced)
- Onion (Sliced)
- Chiles Serranos (small pieces)
- Ham (slices)
I start by frying the tortillas, once fried they are set aside. Next step would be to fry the eggs and set aside on a paper towel to absorb the excess oil. Now fry the ham slices a bit as well and set aside.
Now that we have these three items cooked and ready we will make the tomato salsa. Put some oil on the pan and add the tomatoes, onions and chiles. Cook everything until a thick paste.
Once this is cooked to a thick paste you will add water and let it boil. Once it boils you will add salt to your taste.
This salsa is done. Just skip the next step and go to the assembling part of the dish. But if you are like me and love the taste of indian food then you will love it with some Garam Masala. I seasoned with some salt and then I add the masala and let it boil for about 1 more minute. *Remember, adding the garam masala is totally optional.
Now it’s ready. Lets start the assemble process. First, add the ham to the tortilla, then the egg, then the sauce and at last the cheese. Now we serve with some rice and refried beans.
