Tacos dorados are in relation real close to flautas. The only difference here is that these fried tacos are not rolled up like the flautas, instead these are folded in half. The stuffing/Filling is totally up to you. Same as with the flautas, you can choose any one of your favorites. These here are two different fillings, one is potato and the other are pinto beans. The toppings are also to your liking and remember, the toppings are endless.
You will need:
- Corn Tortillas
- Cooked Potatoes
- Lettuce (shredded) or even Pickled Cabbage
- Tomatoes (sliced)
- Salsa (salsa verde, salsa asada or even pico de gallo)
- Cotija or Fresh Cheese
Make sure you have enough oil in the pan for frying. Once its heated you will add some of the filling to the tortilla and you will hold it from the top to sit on the oil. Once the bottom of the tortilla is soft you will set it to the side and fry. Do this to as many tacos fit in your pan.
Continue to fry all the tacos until all your tortillas are gone. Set aside, standing on a large strainer, this will remove as much of the excess oil from them as possible. Once you are done you will be ready to fill them up and serve them.
