Arroz con leche is loved by everyone in my home. Some of us like eating this when it’s hot and some of us like eating it when it’s cold. I love it both ways. Very little ingredients and lots of flavor.
You will need:
- 1 1/2 cups of Rice
- 1/2 Gallon of Milk
- 1 cup Sugar
- 2 Cinnamon Sticks
- 1/2 Tbsp Vanilla Extract
- 2 cups of water
- Ground Cinnamon to garnish
Put water to boil with the cinnamon sticks. Make sure you rinse the rice throughly and add it to the water, stir and simmer for about 10 minutes. Once the water is absorbed its time to add the milk.
Add Milk and bring to a boil. Stir occasionally so that the rice won’t stick to the bottom of your pot. Add the sugar and the vanilla extract. stir and cook for about 5 more minutes.
Do a taste test. Add more sugar if needed and you may leave it more time cooking if the rice is still not fully cooked. Now it’s time to serve. This next step is totally up to you, you may serve this hot or you may let it cool down a bit then place in the refrigerator for about 2 hours to serve cold. Sprinkle some ground cinnamon and enjoy!
We and when I say we, I mean in Nicaragua, we have the ‘arroz con leche’ and do it a little different. But this one looks AMAZING – so good! 😊
