Fried Spinach is a simple side dish that everyone here at my home loves. Specially the few vegetarians that I have here as well. Very easy to make and goes great with any dish you love.
You will need:
- Spinach (2 6oz bags)
- 1 Tomato (half sliced)
- 1/2 Onion (half sliced)
- 1 Chile Serrano (only if you like hot)
- 1 Garlic clove (minced)
- Salt and pepper to taste
- Oil for frying
Wash and rinse the spinach and set aside. Put a 1 TBS of oil to heat and add the tomatoes, onion, garlic and chiles, add salt and pepper and fry them until the tomato completely cooks and the onion is translucent.
Once this step is done you will add 1/4 cup of water and let it boil.
Once this boils, it’s ready for the spinach. Mix throughly and cover for about 5-7 minutes.
You will have liquid at the bottom of the pan when the cooking is done, if you don’t want it with that much liquid you may let it boil uncovered for 5 more minutes and you’re done. I love it with liquid because I pair it with white rice and eat it with corn tortillas. Delicious. I just hope that you enjoy this dish as much as my family and I do.
