Shrimp Fried Rice

Being that this is one of my daughters favorite dishes I tend to make it often. I never have leftovers when I make it. I don’t know about you all but I love it when all my food is gone on one seating and everyone tries to take the last bits and pieces from their own plate. Very satisfying to see everyone enjoying a nice meal. And this Shrimp fried rice is one of those. Hope this becomes one of your favorite meals to make.

You will need:

  • 1 lb large Shrimp peeled and deveined
  • 1 tsp Cayenne pepper
  • 1 tsp Lemon Pepper
  • 1 tsp pepper flakes
  • 1/2 tsp onion powder
  • 1/2 tsp Cajun seasoning
  • 1/2 tsp old bay seasoning
  • 2 tbsp butter
  • 2 eggs beaten
  • 2 cups cooked white rice

Place the shrimp in a bowl making sure they are dry. Add the Cayenne, pepper flakes, lemon pepper, old bay seasoning, Cajun seasoning and onion powder.

Mix well and set aside.

Melt the butter in a pan on medium heat and add the shrimp. Cover and cook 2-3 minutes on each side.

Once the shrimp is cooked removed them from the pan and set them aside leaving the drippings on the pan. Add the rice and cook for about 5 minutes.

Now its time to add the egg. Make space in the middle of the rice and the beaten egg, stir the egg only until it’s cooked through and fluffy. Now mix everything together.

Now that we have the egg nicely mixed with the rice, it’s time to add the shrimp.

Mix and cook for about 2-3 minutes and you are done! You can serve this with a nicely buttered french bread and enjoy!
