Tortitas de Papa are loved in my home all year-long but very much requested during Lent. Since we stop eating meat during those 40 days this is one side dish that never gets left behind.
Prep Time: 15 minutes Cook Time: 35 minutes
You will need:
- 8 Boiled potatoes
- 12 medium size eggs
- 1 cup Cotija cheese
- 1 Cup grated onion (about 1 small onion)
- 2 TBSP Salt
- 1 TBSP Black Pepper
- Oil for frying
Have the oil heating on a large pan on medium heat while you get the potato mix ready.
Once the potatoes have cooled down a bit you will shred them in a large bowl along with the onion. Add the cotija cheese, eggs, salt and pepper.
Once you have everything in the bowl use a large spoon to mix well. Mix until the egg is fully incorporated into the potato.
You should have the oil hot and ready. Use the same spoon you used to mix as your measure, that way all the patties come out the same size. Add about three or four patties at a time to the hot oil. Fry them for about 3 minutes on each side or until golden brown.
Continue doing this until you are done with the potato mix. As they are coming out make sure to place them on paper towels so that the excess oil can be absorbed.
Kids love these with ketchup and adults love these with salsa.
