Mashed Potatoes

Mashes potatoes are a family classic and a must at my house. Super easy to make, and they always turn out delicious.

You will need:

  • 15 Potatoes (Med to Lg size, Boiled)
  • 1 Box Cream Cheese
  • 1 Cup Sour cream
  • 1 Cup Butter
  • 1 TBSP Parsley Flakes
  • 1 TBSP Chives
  • 1/2 Cup Milk (if needed)
  • Salt & Pepper to taste

Peel and boil the potatoes, as soon as they are done cooking you will start to mash them. Do not wait until they cool down to start to mash them. It’s mush easier to mash them if you do this while the are still hot. Continue to do this until they become real smooth.

 

While the potato is still hot you will the butter, cream cheese, sour cream, chives, parsley flakes, salt and pepper. Mix everything well. If the potato is a bit thick for your liking then this is where you will add the milk to make it smooth.

 

Do a taste test and add more salt if needed.

This is where you get creative. You can add bacon bits, cubed fried ham pieces, green onions, shredded cheddar cheese, etc.  Serve this along side some meatloaf, grilled chicken, meatballs with gravy, etc The possibilities are endless!
