Mexican Beef Soup (Caldo de Res)

Mexican Beef Soup (Caldo de Res) is another dish that falls into our comfort food list. This is one of many soup dishes that the whole family will love. Hearty, healthy and perfect for a cold winter day.

You will need:

  • 2 lbs Beef Shank
  • 4 Garlic Cloves
  • 5-6 mint leaves
  • 3 Tbsp Salt
  • 1/2 stalk Cilantro
  • 1/2 Cabbage (cut in 1/2)
  • 1 Bell Pepper (chopped)
  • 5 Potatoes (Chopped)
  • 2 Corns (cut in small pieces)
  • 1 Chayote (chopped)
  • 2 Zucchini (chopped)
  • 4 Carrots (chopped)
  • 2 Celery (chopped)
  • 1 Onion (1/2 for the meat boil)
  • 1 Tomato (cut in 4 pieces)
  • Cooked Rice (optional)


We Start off by boiling the Beef Shank with some salt, onion and the garlic cloves. It will foam once it starts to boil. Remove as mush of that foam as possible. Add the cilantro, mint leaves and the corn. Boil until the meat is fully cooked. Pinch the meat and you will know when it is soft.


Now that the meat is cooked it’s time to add the vegetables. Add the cabbage, potatoes, bell pepper, chayote, carrots, zucchini, onion, celery and tomato. Bring back to a boil and do a taste test. Add more salt if needed. Cook for about 20 -30 minutes or until the potatoes are cooked.

Serve with some corn tortillas, lemon wedges and some salsa. This is one of many soups dishes that I like to serve with rice. But that is completely up to you.
