Rice with Eggs

This recipe was shared with me by my niece. At first I was hesitant to try it, but then I gave it a shot. I’m so glad I did because it quickly became by daughters favorite. I hope you give it a shot just like I did. You never know, it might be your new favorite rice.

You will need:

  • 2 Cups Rice
  • 1/2 Cup Bell pepper (diced)
  • 1 Roma Tomato (shredded)
  • 1/2 Cup Onion (shredded)
  • 1 Garlic Clove (minced)
  • 1/2 Cup Green Beans (chopped)
  • 2 Tbsps Knorr
  • 3 Eggs
  • 4 Cups Water

Lets start by frying the rice and dicing and shredding what we need.

Once the rice is fried add the tomato, onion, bell pepper, garlic, and green beans. Mix for about 2 minutes and add the water. *2 Cups water to 1 Cup Rice  When it starts to boil add the knorr and stir.

Boil for 5 minutes and crack the eggs directly over the rice.


Cover and simmer for 18-20 minutes. Do not open the lid during the cooking time.  Open and fluff with a fork breaking the eggs.

Serve hot!
