Shrimp patties are a must in our home during lent. Specially on Fridays when we don’t eat meat. These are very easy to make and quick to prepare.
You will need:
- 6 Eggs
- 1 Cup Ground Sprimp
- 1/2 Cup Bread crumbs
- 3 Chile Guajillos
- 2 Chile California
- 1 Chile Ancho
- 1/2 Cup Cilantro
- 1 Garlic Clove
- 1/4 Onion
- 2 TBSP Knorr
- 2 TSP Ground Cumin
- 2 Cup Cooked Nopales (cactus pods)
- 4-5 Cups of water
- Oil for frying
Seperate the yolks and the egg whites. Beat the egg whites to a thick foam.
Fold in the egg yolks, then add the ground shrimp and the bread crumbs. Keep folding until well mixed.
Put the oil on the pan on medium to high heat. Add the mix to the hot oil with a spoon to form small patties.
Fry for about 2 minutes on each side. Have some paper towels ready so you can place the patties once they are done cooking, this will help with the excess oil.
Once you are done with all the patties let them sit on the paper towel while you finish up the red sauce. Boil the chiles and add to a blender along with the cilantro, onion and garlic. Blend well.
Get a shallow pan and add the red sauce and add the water. Bring to a boil. Add the cumin and the knorr seasoning. Taste test. Add a bit more of knorr if more salt is needed.
Once the sauce is to your liking, add the Nopales and cook for 5 minutes. Add the patties and make sure you flip them as you put them in the so they can absorb the sauce.
If you are not a fan of nopales, then you can omit this step. Once the Sauce comes to a boil add the patties.
You can serve these with a side dish of rice or you can eat alone along with some corn tortillas. Your preference.
