Garbanzo Soup

This is a soup that my family almost always request during a chilly day or during lent. I love it so therefore I don’t mind cooking it. Like most of my recipes this one is super easy and quick.

You will need:

  • 2 cans Barbanzo beans
  • 3 Roma Tomatoes
  • 1/2 Onion
  • 1 tbsp Cumin
  • 1 tbsp Knorr
  • 1/2 cup Cilantro
  • 1 garlic Clove
  • 1 yellow Pepper
  • 8 cups Water
  • Oil for frying

Rinse the garbanzos and set aside to drain.

Heat some oil on a medium pot and add the chopped cilantro, the tomatoes, onion, yellow pepper and minced garlic.

Fry for about 5-7 minutes or until the tomato starts to dissolve.

Add the garbanzos and fry for about 3-4 minutes.

Add water and bring to a boil.

Add the knorr and the cumin.

Continue to boil for about 2 minutes and do a taste test, season to your preference. Mash the garbanzos only a few times. Do not mashed completely.

Let boil for about 5 more minutes and you are set. You may add rice to this dish just like we do. Adding the rice is completely up to you.
