Enfrijoladas De Huevo

Enfrijoladas is a super easy recipe and all you need is what you already have in your fridge. First time I tried this dish I tried them with cheese instead of eggs and let me tell you that they are delicious either way.

You will need:

  • 2 Cups Boiled Bean
  • 3 Chipotle peppers
  • 1 Cup sour cream
  • 5 Eggs
  • 1 1/2  Roma Tomatoes
  • 1/2 Small Onion
  • 2 Serrano chiles
  • 1 Chorizo sausage
  • 1 Cup Fresh Cheese
  • 12 Corn tortillas
  • oil for frying
  • Salt for seasoning

To prepare the eggs we will fry the onion, tomatoes, and chile serrano for about 5 minutes or until the onion becomes translucent.

Beat the eggs and add them to the pan. Scramble until fully cooked. Set aside.

Put the beans in a blender and add the chipotle peppers and the sour cream, blend well.

Heat 1 TBSP of oil in a pan and add the bean mix. Fry for about 5 minutes.  Remove and set aside.

In a separate pan fry the chorizo and set aside.

Heat 1/2 cup of oil in a pan and fry the tortillas for about 5 seconds on each side, remove and place on a paper towel. Do this to all the tortillas.

Time to assemble this dish. Place the tortillas on a plate, put the egg and fold.

Add the bean mix over the top.

Sprinkle the fresh cheese and enjoy!

Sometimes I serve this dish with rice. But either way you decide to make it, I assure you that it will be delicious.
