Tuna Sandwich

Tuna sandwiches are very easy to make and perfect for a summer lunch. This is a recipe you can make ahead and take with you to the park, to the beach to the off-road get-together. Just pack it and take it. Tuna is not something that is liked by everyone in my home but regardless it’s a dish I still enjoy making because it’s easy and the few that do like it really enjoy eating it.  This is just like all my other recipes, they are all done the way we love them at home. Hope this and many other recipes make it to your dinning table.

You will need:

  • 2 Cans Tuna (chunky light tuna in water, drained)
  • Lettuce (1 cup Shredded, and single leaves for the sandwich)
  • 2 tomatoes (1 tomato chopped and the other sliced)
  • 1/2 cup Celery (chopped)
  • 1/2 cup Green onion (chopped)
  • 1/2 cup Cilantro (finely chopped)
  • 1/2 cup Mayo
  • 2 TBSP Sweet relish
  • 1 TBSP Red Pepper Flakes
  • 1/2 Lime juice
  • Salt to taste
  • Sandwich bread

In a large bowl, add the drained tuned, then add the shredded lettuce, chopped tomato, celery, cilantro, green onion, mayo, sweet relish, and lime juice. Mix well.

Add the pepper flakes and mix. Add salt if needed.  Get the slices of bread ready and add the tuna to one slice, add sliced tomato and lettuce.
